Cockeyed Farms Blueberry Pork Tenderloin

Ingredients:

  • 2 cups CF Blueberry Creamed Honey
  • 1 tsp ground cardamom
  • 1 tbsp fresh thyme
  • 2 tsp kosher salt
  • 1/2 tsp pepper
  • 1 lb pork tenderloin
  • 2 tbsp olive oil
  • 1/2 cup white balsamic vinegar
  • 1 pint CF fresh blueberries
  • 1/4 cup gin

Instructions:

  1. Preheat oven to 425. Line a rimmed baking dish with parchment paper
  2. Trim tenderloin of fat, and rub with 1 tbsp olive oil
  3. Glaze pork with 1 cup CF Blueberry Creamed Honey
  4. Rub salt, pepper and chopped thyme into the honey on the pork
  5. Place tenderloin on the prepared baking dish
  6. Roast pork until a meat thermometer registers 145, 20-25 minutes
  7. Allow to rest for 10 minutes before cutting
  8. While the meat rests, heat the remaining tbsp olive oil over medium heat.
  9. Add blueberries to remaining CF Blueberry Creamed Honey with cardamom into the saucepan with olive oil
  10. When the blueberries soften, add vinegar and gin and simmer until thickened.
  11. Slice pork tenderloin and serve blueberry sauce over the meat.
