Ingredients:
- 2 cups CF Blueberry Creamed Honey
- 1 tsp ground cardamom
- 1 tbsp fresh thyme
- 2 tsp kosher salt
- 1/2 tsp pepper
- 1 lb pork tenderloin
- 2 tbsp olive oil
- 1/2 cup white balsamic vinegar
- 1 pint CF fresh blueberries
- 1/4 cup gin
Instructions:
- Preheat oven to 425. Line a rimmed baking dish with parchment paper
- Trim tenderloin of fat, and rub with 1 tbsp olive oil
- Glaze pork with 1 cup CF Blueberry Creamed Honey
- Rub salt, pepper and chopped thyme into the honey on the pork
- Place tenderloin on the prepared baking dish
- Roast pork until a meat thermometer registers 145, 20-25 minutes
- Allow to rest for 10 minutes before cutting
- While the meat rests, heat the remaining tbsp olive oil over medium heat.
- Add blueberries to remaining CF Blueberry Creamed Honey with cardamom into the saucepan with olive oil
- When the blueberries soften, add vinegar and gin and simmer until thickened.
- Slice pork tenderloin and serve blueberry sauce over the meat.
