Ingredients:
- 1 tablespoon CF American Elderberry Juice
- 2 cups Arborio rice
- lemon zest
- 2 tablespoons Parmesan cheese, grated
- 1 cup breadcrumbs
- 1 cup coconut oil
Instructions:
- Follow instructions for cooking Arborio rice on package, but add the CF American Elderberry Juice to the liquid you cook the rice in
- Allow rice to fully cook and cool
- In a bowl, combine the cooked/cooled rice, lemon zest & grated Parmesan cheese
- Shape the mixture into small balls
- Roll each ball in breadcrumbs
- Heat coconut oil in a pan & fry the risotto balls until golden brown
- Serve crispy
