Cockeyed Farms American Elderberry & Lemon Risotto Balls

Ingredients:
  • 1 tablespoon CF American Elderberry Juice
  • 2 cups Arborio rice
  • lemon zest
  • 2 tablespoons Parmesan cheese, grated
  • 1 cup breadcrumbs
  • 1 cup coconut oil

Instructions:

  1. Follow instructions for cooking Arborio rice on package, but add the CF American Elderberry Juice to the liquid you cook the rice in
  2. Allow rice to fully cook and cool
  3. In a bowl, combine the cooked/cooled rice, lemon zest & grated Parmesan cheese
  4. Shape the mixture into small balls
  5. Roll each ball in breadcrumbs
  6. Heat coconut oil in a pan & fry the risotto balls until golden brown
  7. Serve crispy
