Carmelized Sweet Potatoes with American Elderberry Creamed Honey, Goat Cheese & Walnuts

Ingredients:

Sweet Potato Base

  • 2 large sweet potatoes, peeled and sliced into thick rounds
  • 2 tbsp olive oil
  • salt & pepper to taste

Topping:

  • 100g goat cheese (soft or crumbled)
  • 12-16 chopped walnuts, toasted (pistachios also work well with this flavor profile)
  • 2 tbsp CF American Elderberry Creamed Honey
  • fresh thyme sprigs

Instructions:

  • Preheat oven to 425
  • Wash, peel & slice sweet potato slices with olive oil, salt & pepper until evenly coated
  • Arrange slices in a single layer on a parchment-lined baking sheet
  • Roast for 25-30 minutes, flipping halfway through
  • During the last 5 minutes of roasting, spread CF American Elderberry Creamed Honey over the potatoes to glaze
  • Transfer hot sweet potatoes to a serving dish
  • Top with crumbled goat cheese and roasted nuts
  • Garnish with balsamic glaze and fresh thyme
  • Serve warm & enjoy!
