Ingredients:
Sweet Potato Base
- 2 large sweet potatoes, peeled and sliced into thick rounds
- 2 tbsp olive oil
- salt & pepper to taste
Topping:
- 100g goat cheese (soft or crumbled)
- 12-16 chopped walnuts, toasted (pistachios also work well with this flavor profile)
- 2 tbsp CF American Elderberry Creamed Honey
- fresh thyme sprigs
Instructions:
- Preheat oven to 425
- Wash, peel & slice sweet potato slices with olive oil, salt & pepper until evenly coated
- Arrange slices in a single layer on a parchment-lined baking sheet
- Roast for 25-30 minutes, flipping halfway through
- During the last 5 minutes of roasting, spread CF American Elderberry Creamed Honey over the potatoes to glaze
- Transfer hot sweet potatoes to a serving dish
- Top with crumbled goat cheese and roasted nuts
- Garnish with balsamic glaze and fresh thyme
- Serve warm & enjoy!
